泡芙加了層菠蘿皮真是手續有點給他麻煩說,而且又稍嫌費時,花了一個下午的時間(將近5個小時),不過泡芙好像加了菠蘿皮長的更大了,好像就跟人類一樣,有壓力才會成長,真是給他可愛說~
菠蘿皮配方:低粉190g 杏仁粉(或奶粉)34g 奶油155g 細砂120g
泡芙配方:沙拉油60g 水205g 鹽3g 奶油67g 高粉166g 全蛋300g
內餡:打發鮮奶油400g 奶油布丁餡:400g 蘭姆酒30cc(蘭姆酒為增加風味用,可加可不加)

先將糖和奶油拌打至糖溶解

在加入過篩好的杏仁粉和低粉揉勻

蓋上保鮮膜放入冰箱冷藏一下,給他稍微冰硬些會比較好操作

泡芙做法:將沙拉油.奶油.水.鹽給他加熱沸騰

拌入高粉迅速給他拌勻成團後離火,待涼(一定要放涼些,不然加入蛋液時,蛋會變成蛋花)

麵糊成倒立三角形並還有流性為標準狀態(太乾或太濕都會影響泡芙烘烤結果)

將麵糊擠上烤盤,預留膨脹空隙

將做好的菠蘿皮取適量揉圓壓平舖在擠好的泡芙麵糊上

放入烤箱,溫度約200度,30分左右(烘烤過程中不可將門打開,否則泡芙會發不起來)
